February Update: 107 Days Until Our Season Opener!

Maya has almost completed her rehab following her TPLO (Tibial Plateau Leveling Osteotomy) surgery to repair her torn ACL and I am doing well after a brief illness and stay in the hospital. We were both able to get out the past weekend for a final trip to hunt some pheasant and quail. I had a great weekend and Maya was out of control but did well!

Jan prepared one of our favorite dishes “pheasant scallopini,” it is as delicious as fresh walleye prepared during a shore lunch!! If you ever get a chance to harvest some pheasant or can talk one of your hunting buddies out of a couple of pheasant breasts be sure and jump on the opportunity, you will love this dish!

Pheasant Scallopini Recipe

  • 2 pheasant breasts
  • 1  cups fine breadcrumbs
  • 2 eggs, beaten
  •  ¼ cup butter or margarine
  • Salt & Pepper
  • 1 lemon

Slice each breast into ¼ inch thick pieces. Place each slice between double folds of waxed paper and gently flatten with a wooden mallet or meat cleaver. Season beaten eggs liberally with salt and pepper, dip each slice of breast meat into eggs and then roll in breadcrumbs. Do not use too much egg or you’ll overwhelm the flavor of the pheasant. Separate each layer of meat with waxed paper and place in refrigerator for 2 hours. Melt butter and sauté chilled slices of meat 1 minute on each side. Do not overcook, meat should be golden and juicy.

Serve with or without lemon juice squeezed over meat. YUM!

It’s hard to believe but we have only 107 days until our first guests arrive. Wow, time flies and we are so excited to be moving into our second season. Thanks to all of the support from our loyal guests we are almost completely booked for the 2018 season. There are a few openings still available during some prime fishing dates so be sure and check out our website under Reservations/Availability to see the dates. Be sure and check out our web page periodically as we will continue to update this information with the current availability.

We are finalizing and getting confirmation letters out to everyone who has booked and paid their deposits for the 2018 season and again would like to thank everyone for their continued support.
