Eagle Falls Lodge Broccoli Salad

 

 

 

 

 

You may have noticed a couple menu changes this season at Eagle Falls Lodge.  We are always looking for ways to improve your experience whether it pertains to fishing, food, or accommodations.  The food aspect can be touchy since many of you look forward to the same menu year after year.  We aim for upgrades only while respecting the tradition of the menu.

So how is broccoli an upgrade?  “Vile weed” you say?  Carrie has worked a little more of her culinary magic on this side dish.  Believe it or not, this single dish has had more requests for Carrie to share the recipe than any other.  The trouble is, she doesn’t have a written recipe for it.  She goes off feel and has to ballpark the amounts into written form every time someone asks for the recipe.

I can’t say I’m much of a broccoli fan and this salad is delicious.  You can enjoy it on Sunday evenings with the new turkey dinner or try it yourself with this recipe.

Warning: amounts approximated

Eagle Falls Lodge Broccoli Salad Recipe
for the salad:
3-4 cups broccoli florets chopped into bite size pieces
1 crisp apple diced small
2 Tbs diced red onion
1/4 cup raisins
6 slices bacon crumbled
1/4 cup chopped pecans or walnuts (optional)
for the dressing:
1/2 – 1 cup mayonnaise (depends how much dressing you like on the salad)
1 tsp lemon juice
1 tsp apple cider vinegar
1/4 cup sugar
salt and pepper to taste

– mix all salad ingredients into bowl
– prepare dressing and add to salad, tossing to make sure everything is evenly mixed
– Enjoy!

This can be made a few hours early – just leave it in the fridge until ready to serve.  For a healthier version, substitute most of the mayonnaise with plain greek yogurt (you won’t be able to taste the difference!)
